In the past, for example, students have * Examined the basic mathematical properties of the Lorentz transformations and the Minkowski interval. * Calculated the precession rate for a binary pulsar following exercises from the book _Exploring Black Holes_ by E.F. Taylor and J.A. Wheeler. Non-mathematical honors options should also be possible.
